No Machine Rocky Road Ice Cream

By | June 25, 2017

This is a super simple recipe for an old favorite - rocky road! It's a 'no machine' (or 'no churn') recipe which means you can make it without an ice cream machine. I like rocky road but its not one of my favorites so this was great and well received but I won't be in a hurry to make it again. However, you could easily switch out the mixins to get some variation. The recipe calls for chocolate sweetened condensed milk which I couldn't find in my supermarket so I just went with regular sweetened condensed milk and it worked fine. However, I think you could easily add some cocoa to get the chocolatey base.

Yield ~ 1 litre / 1 quart

Prep time: 15 mins + 6 hours freezing time

My rating: 4/5

Ready to get serious about your ice cream making?

The 'no churn' method is great for occasional batches but if you want to get serious about your ice cream making I suggest you invest in an ice cream maker designed for home use.

The two ice cream makers I recommend are the Cuisinart ICE-70 and the Breville BCI600 XL. Click the images below to read more about those two machines or check out my complete guide to ice cream makers to see all the options and read the pros and cons of each.

Notes

  • As you can see my chocolate chunks are quite large which made them a bit of a mouthful. Consider making them somewhat smaller for easier eating and chewing
