I like macadamias but I'm more partial to cashews. Mum on the other hand loves macadamia nuts so this recipe was something for her. For some reason (probably need more practice) I couldn't get the caramel to swirl and it ended up getting mostly mixed in. The flavor was still good but presentation wasn't as good as the picture in the recipe on Myblueberrybasket.com.
Yield ~ 1.5 litrse / 1.5 quarts
Prep time: 30 mins + 10 mins cooking + 6 hours freezing
My rating: 4/5

The 'no churn' method is great for occasional batches but if you want to get serious about your ice cream making I suggest you invest in an ice cream maker designed for home use.
The two ice cream makers I recommend are the Cuisinart ICE-70 and the Breville BCI600 XL. Click the images below to read more about those two machines or check out my complete guide to ice cream makers to see all the options and read the pros and cons of each.

Notes
- As mentioned above, I wasn't able to swirl the caramel through the ice cream so it doesn't look as good but still tastes ok. The caramel did end up pretty runny so that might have contributed to the difficulty but likely I probably need some more practice at it
- As always, I used vanilla extract instead of vanilla pods and it turned out fine

Macadamias

Food processed into a paste

Making the caramel sauce

Combining the caramel sauce with whipping cream

Whipping cream and adding sweetened condensed milk

Serve and enjoy (this batch is the lighter of the two)
