No Churn Coca Cola Ice Cream Recipe

The world's most popular soft drink combined with the world's most popular dessert, what do you get? Coco cola flavoured ice cream! This is an easy no churn recipe I created to try this 'match made in heaven' combination. Did it work? Not really. I made it from Coke as you can see in the photo below so the flavor was definitely there but the form was so different to what we're used to when consuming this icon soft drink (pop/soda/fizzy drink) that it wasn't really recognisable as Coke. It's still totally edible but I've given it a 3/5 because the flavor is not authentic and the taste is just ok.

If you've ever had cola flavored lollies/candy then you'll know that they've created their own candy version of the cola flavor, I suspect for similar reasons ie. because it's too difficult to transfer the exact flavor of a drink.

No Churn Coca Cola Ice Cream

Ready to get serious about your ice cream making?

The 'no churn' method is great for occasional batches but if you want to get serious about your ice cream making I suggest you invest in an ice cream maker designed for home use.

Ingredients

  1. 1 Litre (34 fl oz) bottle of regular Coca Cola
  2. 1/2 can (1 can = 395g/14oz) sweetened condensed milk
  3. 2 cups whipping cream

Method

  1. Pour the 1 Litre/34 fl oz bottle of Coca Cola into a saucepan and bring to a boil
  2. Boil the Coke until it most of the water is removed and it resembles a syrup (20 - 30 mins) 
  3. While it's still hot, combine the Coke syrup with your sweetened condensed milk (1/2 can)
  4. Whip the cream (2 cups) with an electric mixer until soft peaks form
  5. Run the mixer on low as you pour in the sweetened condensed milk and syrup mixture
  6. Fold through to ensure an even distribution without removing the air from the whipped cream. Be sure to check the syrup mixture hasn't pooled at the bottom of the bowl
  7. Transfer to a freezer safe container and freeze for 6+ hours
  8. Serve and enjoy!

Notes

  • Most no churn recipes call for 1 full can of sweetened condensed milk but I reduced it to half for this recipe because the Coke syrup already has a lot of sugar in it. However, this does also remove some of the milk fat so you might substitute with some unsweetened condensed milk to reintroduce it back in
