No Churn Cinnamon Ice Cream Recipe

This is probably the simplest ice cream recipe I've made and yet its one of my absolute favorites and I've made several batches over time. In the image below you'll see the cinnamon ice cream at the front and some coffee ice cream in the back (the post about that will be coming in a few weeks). The simplicity of the ground cinnamon addition for flavor allows the base to maintain maximum fluffiness while the flavor is spread evenly throughout and enjoyable in every mouthful. One other thing I discovered is that it goes amazingly well on crepes or pancakes - the combination of the cold ice cream on the hot pancake adds that extra dimension - but you have to eat it quick!

Notes

  • The recipe calls for 'Saigon Cinnamon' which I couldn't find in my supermarket so I went with 'Dutch Cinnamon' and it worked fine. I've also made the recipe on other occasions with other types of ground cinnamon and it always tasted great so don't worry too much about that
