I was looking for an easy 'no machine needed' (aka 'no churn') salted caramel ice cream recipe and I came across this one from Epicurious. It was the first time I'd ever heard of 'Dulce de Leche' and I was excited to try something different and see how the humble sweetened condensed milk could be transformed. Wikipedia describes Dulce de leche as "a confection prepared by slowly heating sweetened milk to create a substance that derives its flavour from the Maillard reaction, also changing colour, with an appearance and flavour similar to caramel." In the interest of being precise, I decided to name this recipe as 'Salted Dulce de Leche' rather than 'Salted Caramel' as they do seem to be different even if similar. The original recipe describes it as 'salted caramel,' however.
Yield ~ 1 litre / 1 quart
Prep time: 15 mins + 2 hours cooking + 6 hours freezing
My rating: 4/5

The 'no churn' method is great for occasional batches but if you want to get serious about your ice cream making I suggest you invest in an ice cream maker designed for home use.
The two ice cream makers I recommend are the Cuisinart ICE-70 and the Breville BCI600 XL. Click the images below to read more about those two machines or check out my complete guide to ice cream makers to see all the options and read the pros and cons of each.
